Enter...The Salad Lab!

LOTS GOING ON in CTE's Culinary Arts class these days. The holiday season has students in the mood to prepare tasty desserts, and this week, they also tackled...the Salad Lab. Instructor Heidi Rocha's got the whole story: "For the salad lab, each learning team selected its own recipe. I asked them to find unique salad recipes that met some of the learning objectives in class (types of salads - bound, composed, dessert, and for dressings - vinaigrette & emulsified vinaigrette). Students were also required to plate, garnish and present their salad. Many of the students were very surprised they liked the taste of ingredients that they normally wouldn't eat. Some of the salads included a traditional Cobb salad, spiced of fall squash salad, thai mango salad with peanut dressing, spring fling fluff fruit salad and chicken avocado caprese salad. For the cookie lab, again, learning teams selected their own unique recipes in cookie categories, such as icebox and molded. Some of the recipes included peppermint gumdrop cookies, french macaroons, chocolate salted caramel macaroons, checkerboard and stained glass star cookies." #CTEitsWorking
